Wood Moisture Measurement

How can I measure wood moisture? I read they measure resistance of wood.
Can I use a wheatson bridge and a instrumentation amplifier for this?

How to select bridge resistances?
How to select proper instrumentation amplifier?

I need 0..<5V output range to read with my ADC...
 

The commonest meters have two sharp metal pins about 30 mm apart. These are designed to be pressed about 10 mm into the wood to measure the resistance along the lengthwise. A typical calibration for these devices is
moisture % 8 10 12 14 16 18 20
megaohms 4800 630 120 33 11 4.5 2.1
 

I don't need high accuracy. How can I design an instrumentation amplifier for this range (4800...2.1Mohm)
I've max4460 and max4462 here. Is it possible to use them?
 

I really want to know how must do I have to set wheatstone brigde. I mean how to select resistors?
