As for as I understand, ergodicity is related to stationarity of the random variable. It means that value of random variable does not depend upon time. So the capacity which is time independent (or u can say average, but its usually long-term average) is called ergodic capacity. This is my understandng of ergodic capapcity in terms of comunication systems.
In informaition-theoretical sense, ergodic capacity refers to the maximum rate that communication can be achieved, assuming the communication duration is longer enough to experience all channel state.
Intuitively, this means channel coding can evetually average over the channel state, hence the mean value counts.

In statistical channel like fading channel, when capacity is computed, it depend on channel statistic(channel coefficient). So it is random variable. Because of that, expected value of capacity should be computed.
Relation between capacity and channel coefficient is not linear, so computing expected valu is not easy.
If channel is Ergodic, expected value computed in time and this is Ergodic capacity.
Another form of capacity in statistical channel is Outage capacity.
