First of all MOSFET is a FET. so there is no difference between them because they are not in the same order. but if you mean JFET by saying FET there are some differences. I think the most important difference is in their phsysics. you can refer to some textbooks about solid state devices like the one by Streetman or another one by Sze. but there is no difference in simplified small-signal model of these two FET types.
and by the way, if I don't know your application or structure of your circuit I can't help you in designing MOSFET. there are lots and lots of application for MOS trs and in each circuit there's a different procedure in circuit design.
