Use the PCM2904 or PCM2902 Burr Brown codec from TI.
This is a USB audio device with stereo mic input and line level stereo audio output. It uses Winows drivers so you dont have to worry about writing WDM.

Each device which is compatible to that spec will be recognized
by Win and Macs as USB micro. The spec contains example descriptors
for a simple usb mic.
