I am struggling to understand the use and operation of FETs - in particular P-channel FETs.

Could someone recommend a good online resource or book that explains the practical use of FETs and how to extract relevant information from the manufacturer's datasheet.

There are Jfets (junction fets) and there are Mosfets.
Jfets are usually depletion type so they conduct maximum current when the gate is the same voltage as the source and they are turned off when the gate has a certain voltage as listed on the datasheet.
Mosfets are usually enhancement type so they are turned off when their gate voltage is the same voltage as the source and they are turned on when the gate has a certain voltage as listed on the datasheet.
A P-channel fet simply has the opposite polarity to an N-channel fet.
Look in Google at Field Effect Transistors.
