ultrasonic and cold water vapour

Can anybody help me to answer the following question: -
Cold and white water vapour comes out when an ultrasonic device is put into water. Why?

I'm jsut guessing but I suspect because the ultrasound makes tiny waves on the surface and surface tension and inertia cause tiny froplets of water to break off.
The surface tension makes the tiny drops of water stay together istead of the water molecules drifitng around on their own.

A human eye can see particles down to about 50micrometer in size.
