I am designing a Doherty PA at 5.9 to 6.4 GHz in ADS and I am trying to figure out which substrate should I use. I could use some help in this topic.

I don't know how to advise but I suspect others might reply if you tell more details and range of choices...
Example, size of process, NPN or PNP or mosfets, etc.
my device is CG2H40010 from Cree/Wolfspeed/Macom

For a sustainable stability, Rogers substrates are appropriate for your application.
Taconic, Isola, substrates can be alternatives for that.

which Rogers do you think is more appropriate? I am between RO4350B and RT6035HTC

I do not know. Depends on many factors.
There should be selection guide on website. Or ask them for most appropriate substrate.
The budget is also important.

I would expect that if this is a real project then you are after realism, and that wants to comprehend the "get real" plan.

Many systems segregate the RF fancy bits in a "front end module" and these are often alumina substrates. A plan to manufacture on PCB would want Rogers or other suited-to-plan RF material.

So make the call and follow the ball
