Could someone explain to me a simple circuit for amplifying the noise a diode junction creates? Preferably something simple that I could simulate in Spice. I'd like to generate audio noise but higher frequencies would be nice as well. Also what sort of criteria should I look for in a diode so that it's the 'noisiest'

You can buy "noise diodes" that are designed for this purpose. For example, visit

Many noise diode manaufacvtures have app notes.
