GOOGLE it man I bet you'll find tons of projects in embedded system .. its a vast area and you need to specify your requirements. Determine:1- which micro/processor-controller you are going to use 2- which programming language you'll use and finally what is the purpose of making this project? what is the problem you are going to solve with your design?
If it is for fun pick a simple one ( You can YouTube some hobbyist projects too)
