I doubt that there will ever be a model for this chip in Proteus.What I do when I want to simulate a processor driving a complicated chip like the vs1003 is to make the input circuit and registers of the chip using normal logic with BCD seven segment displays to display the contents of the registers. This is good enough to enable you to debug your program.
To fully model a chip like the vs1003 would take a lot of time and cost a lot of money, and as it is a fairly uncommon chip it would never pay anyone to create a model for this chip.
