I am very new to this stuff but am interested in learning. I would like to modify a wireless doorbell to be able to keep the power flowing for as long as the button is pressed, not just a on/off burst. I have no idea how to do this. Can this be done easily? any help will be greatly appreciated.
 

Most doorbell transmitters do this already. The receiving end hears the signal, makes the noises then waits again until it no longer sees the transmitter, meaning the button was released. If you keep transmitting, it stays in the final waiting state.

If you are looking to decode the information, you will need either an oscilloscope or a logic analyser.
