While it is getting a bit old, I am a fan of 'The Art Of Electronics' by Horowitz & Hill but it is more of a practical book than theoretical.

For simulators, i recomend livewire by new wave concept limited.it's very easy and simple to use for begineers.for the book you can try principles of electronics published by s-chand.its easy to understand
 
For a simulator I would suggest you use a SPICE based one so you can add your own models. LTspice is free and widely used. It also has an interface to Eagle.
