I had a project I did a few years ago which read a couple DS1620's. I had a RST, CLK & DQ for each one. (In addition to the VCC & gnd, of course). I just realized I could have used the same DQ and CLK for each one and separate RST lines and as long as the RST is low on all but the one being read, the other DQ lines will be high Q. Would this work?
 

According to the data sheet, when RSTn is low, the DQ pin is high-impedance so, yes, this should work. In theory. Just pay attention to impedances, stubs, etc., particularly with respect to the clock.
