Can a DM86S64BTK/N Bipolar character generator dual inline chip be interchanged with a DM76S64BWF or DM76S64CAH, DM76S64CAB, DM76S64CTB, etc. It seems that each character generator uses a different character font and row scan. Can they be interchanged or not?

It seems that each character generator uses a different character font and row scan.
Yes, each postfix stands for a different code table or font size. They have same pin mapping but hold different data and can't be interchanged for a reasonable purpose.

What else can the postfix stand for besides code table and font size. If you put in a different character generator that has a different postfix or font size the circuit will won't be the display will be different. What does the code table have?
