Hi,

I am planning to design a microcontroller trainer, can the members suggest what devices can I include with it.

Start from the simplest such as LEDs.

Btw, can the members also post here a link for Microcontroller Manual used for laboratory exercises.

I think you need to consider whether you want to discuss just one micro-controller or various types. Different micro-controllers have their own
special characteristics. Usually you can find a lot of examples from
manufacturers' application notes.
 

Any microcontroller can do the job, as long as it has the basic requirements for the design, UARTs, I/Os, TIMER/COUNTER...etc.

I wanted to do something similar.
Look over at **broken link removed** under AVR Hardware. Somthing like this is nice because the people can learn on it but also use it for further experimentation afterward.

Another option would be to make a clone of the (now obsolete) Atmel STK200
