Profibus DP can transfer up tp 12Mb/s, so I think that you must have very very very fast mcu to do all things. Siemens have CP for Profibus (Communication processor), which do only profibus protocol, so think again if you want to implement this protocol on mcu.
Profibus is RS485 by hardware, but I don't know where you can find protocol details.
Speed is not a big problem, i can use a dspic or similar dsp+microntroller or even a dsp, that are really fast. The problem is, like you said, the protocol!!.
Here is Profibus DP specification. I'm not sure that this is last version, but anyway I think it may help you.

Siemens has a firmware for 8051 micros from Siemens/Infineon, we have done some projects with a C517 and the siemens SPC3 chip, it is still working very well...
You can also try to use the VPC3+C from company Profichip (www.profichip.com). It is compatible with the SPC3 from Siemens, but Profichip are much more accesible than Siemens. Furthermore you can order to Profichip free of cost samples.
