IR LED shutter release questions

I'm a complete electronics neophyte, but am trying to figure out a way to use IR LEDs to create a camera/video shutter release for small moving objects for which a PIR movement detectors just won't work due to the small size, close proximity the objects and problems with wind and other "noise" that would trip the mechanism if it's used outdoors.

The units that would be used would be these, or similar to them:

I have no idea what else would be needed to wire something like this together...any help would be much appreciated.

Have a search around for 'camera light beam shutter release' or similar phrases. I am sure there will be some circuits to get you started.
