interfacing with a temperature sensor

I have absolutely no experience with temperature sensors. I am interfacing with a STLM20 temperature sensor, the datasheet can be found here:

anyway the connection is quite simple, I have a question regarding the transfer function.....what is it and how can I use it to measure temperature?
 

It's pretty obvious. The data sheet gives you two options: a linear approximation or a second-order approximation, chose which one you like and then perform the calculation.

Where are you having trouble? The equations give you voltage with respect to temperature; that's all you need to know.
