How to make a calculator? Which is programmable, but only with logic gates

You build a state machine out of logic using basic gates and LUTs.

Go to youtube.com and search with this phrase "calculator discrete logic"
 
It sounds like this is related to an arithmetic logic unit, correct? The ALU 74181 is mentioned at Edaboard every once in a while. A forum search on 74181 turns up several threads about it.
It's also a circuit included in the menu of Falstad's animated interactive simulator. Schematic below. I suppose a hardware project requires adding keypad (diodes, switches) and 7-segment displays.
