How to interface Analog meters into processor?

Hi,

I do have an 8-channel 8-bit Analog to Digital Converter present on my circuit, it has an input range between 0-5VDC. Channel inputs 1 and 2 were used for analog level meters, so I am planning to use the remaining inputs in monitoring Voltage (AC/DC) and Current taken from panel meters to maximize usage of the said circuit.

May I have any idea on how to interface Analog panel meters (Voltage/Current) into processor / microcontroller. What are the common outputs of typical panel meters (frequency, voltage, current)?
