I need a book on the subject of gcc and cross-development, that would explain clearly the use of gcc, gdb, gdb stubs, startup code, linker scripts, etc.

Does anyone have something like:
Microcross GNU X-Tools™
Professional Embedded Development Tools
Training Guide
or
Embedded GNU Jumpstart Manual

That can comment?

Any pointers to good tutorials or documents on the web?

As far as those are GNU tools there are couple of documentation on gcc,gnu.org site . If you are interrested in implementation - there is gcc internals document and few more .
If you are searching for arm port , there are prebuilt binaries for windows :

Also check the existing projects for arm , let say uclinux .
