Elementary questions in simulink (encode sine signal to motor)

I have an application using encoder attached to a motor. Encoder produces sine/cosine outputs. Now I want to model the motor acceleration and its reflection upon the sensor output. In other words, I want to generate a sine wave that accelerates from rest to reach 100 RPM in steps ( 0,10,20... 100)(corresponding to motor speed). I want do this in simulink with the available sine source. Is it possible?
