Hello,
I am printing out the bottom silk and bottom copper to act as the bottom assembly diagram.

However, the bottom silk lettering is obscured in places by the bottom copper...how do I make the silk lettering stand out above the bottom copper?

Copper doesn't prevent you seeing the silk screen. What you do need to avoid is silk screen on copper which is to be soldered i.e. Where there is no solder resist.

If your only concern is on a printed version for assembly, simply don't print copper - just the silk screen layer, the outline and maybe vias. You can also use the info layers (51 & ?? from memory) to add information.

....ok thanks, I wondered if I should temporarily change the top copper for a different colour, but no, I see your point, just don't print the copper

If you are printing it in colour then you could juggle with the colours but on a monochrome printer the shades of grey don't work well so I print in solid black and limit what is on each print. Assembly houses seem to have no problems with it.
