Hello,
This may seem weird, but I know nothing of electronics and want to make a huge project. I want to build a LED monitor almost from scratch. I have enough time and will to read any books and become an expert. Where do you recommend me to begin? Which books or topics should I study? And where can I find the architecture of a LED monitor to build my own?

start with simulation of 7 segment display using any micro controller.
 

Learning Arduino ( arduino.cc ) will be easier and helpful , also good knowledge in of Physics and Mathematics is a plus point.
You can start from arduino controlled Seven segmented display then to 16*2 lcd display and then to advanced displays and to other micro-controllers.
