Design embedded control....help needed

Hi, I am looking for information on designing an embedded control system, it should allow the following:

- input from a variety of sensors, such as continuous changing analog sensors, binary digital sensors;
- output to a variety of small robot motors

What I'm looking for is to find any book links on this subject, and at the same time any recommendations on what software to use to characterize and simulate the behaviour of the system and any possible off-the-shelf chip families that could be used for this purpose.
