Converting USB 2.0 hdd to a data acquisition board

Cheap USB 2.0 ??

Anyone have any thoughts on how difficult it would be to use/convert one of the USB hard disk enclosures to a data acquistion board. Would like to interface a 16 bit ADC to PC , need 2.0 data rates
