Can a varistor be used as an amplifier?
 

Only if you use it at it's breakdown voltage so a small change in voltage causes a large change in conduction but they are highly non-linear, relatively slow to react and very poorly specified in terms of breakdown voltage. For practical purposes they are no good as amplifiers and each circuit using them would have to be individually 'tuned' to work at all.
