Previously discussed measurement method https://www.edaboard.com/threads/frequency-calibration-problem-with-ad-5933-for-impedance-measurement.411660/ is useful if you want to measure frequency dependant complex impedance, similar to function of LCR meter. The impedance characteristic of your sensor wasn't yet mentioned. Is it resistive, capacitive or complex? How is it frequency dependant? Is applicable voltage level restricted, e.g. minimal level due to sensor noise? There may be simpler or better solutions depending on sensor properties.
