probably not. you’ve got resistors in parallel that may have unintended consequences. why don’t you try analyzing the circuit? or simulate it?
 
Hi,

if they were ideal loadcells it would give a meanigfull output.
But for real sensors you don´t get precise/accurate output.

I´d not use it.

Multiple loadcells are often simply parallel connected, prerequisite is tightly matched sensitivity and cell resistance.
