Different material: Bare Metal, Ceramic, Solid Metal Nickel-Chrome or Manganese-Copper Alloy, Thick Film, Thin Film
Different Temperature Coefficient: ± 200ppm/°C, ± 100ppm/°C, ± 80ppm/°C, ± 70ppm/°C
Different Brands: PANASONIC , WELWYN , SUSUMU , VISHAY DALE ... etc
Different size: 2512, 2010, 1218 ...

I don't have a professional explanation in your question,
since the characteristics are almost the same (Temperature Coefficient and tolerance) I would go with the cheap one.

Any resistor would work for you, you should only care for the tolerance and Temperature Coefficient so that the measurement is more accurate.

You go with the cheapest that meets your needs. But then
you need to know what your needs are, and some of them
may be unknown / unconsidered.
