I need to use a vibration sensor to sense the vibrations by a user on a device, what are suitable sensor for my application (range of acceleration)

if there are application notes on how to interface this sensor with the microcontroller that will be great

For start..................

Here is manufacturers, you find datasheets and application notes too

Accelerometers - STMicroelectronics

Inertial Sensors | MEMS and Sensors | Analog Devices

MEMS and Sensors | Gyroscopes Temp Sensors (Digital) LVDT Sensor Amplifiers Inertial Measurement Units Temp Sensors (Analog) Microphones Accelerometers (>=70g) Trip Point Sensors (Digital) Inertial Sensors Accelerometers (<70g) | Analog Devices

Few schematics / projects

The Accelerometer - Schematic | PyroElectro - News, Projects & Tutorials

DE-ACCM 5g Buffered 2 Axis Accelerometer

MMA2260 Accelerometer Demo

try google there founds many projects more.

Maybe you can use Piezo Vibration Sensor , it is cheap and simple
" if it is useful in yours project" you specify..............
