What type of project do you need?
simple : like designing filters, removing noise
or more advanced: fingerprint or picture matching.... ?

do you prefer to work on images or sound?

watermarking
image compression

a bit more complex can be
face mathching
finger print matching
etc........

u can also do something different like..

noise seperation from one audio channel to other

also try to do some chip programing which used in ipod or mp3player

also u can make one GUI using LabView for ur subject
