I need a complete schematic and source code for audio recorder with microcontroller (PIC, AVR) that record voice on MMC with FAT format
 

Check out the dsPic family from Microchip. They have a Data Converter Interface (DCI) which allows simple connection to audio codecs. Search the application notes and you should find examples of all
the stuff you need.

The most difficult part of ur project seems to be writing data to the MMC. As far as the audio is concerned , it can be easily handled by the A-D converter. Search for any MMC interface project and it will solve ur problem. U will never find the complete project.
