How many stepper motors can be controlled (direction of rotation only) by a single 8051 microcontroller.?
I want to control the direction of rotation of 4 stepper motor, for that which microcontroller can be used?

Yes, you can control 4 stepper motor using 8051 controller, but it also depends on how to operate Stepper motor and which type of stepper driver circuit you used.

Some stepper driver circuit need three control pin for operate one stepper motor
Likes 1) Enable / Disable
2) Step
3) Direction.

If you used to these type of driver to operate your four stepper motor, then you need 4*3 = 12 control pin and 8051 micro has 32 control pin, thus it is enough for your project.

One other thing also impotent to choose Micro is your Appliction or Project.

Which type of Project you want to do?

I want to make an mobile, tennis ball picking robot.
In that i want to control the Robotic arm and the movement of the bot.
For that , what microcontroller can i use?

Have you considered the possibility of using servos in this robot you plan.
My opinion is that this type of multi-channel motion control may be easier to design and build
by using the so-called RC servos.
