All Triac datasheet says an on-state voltage drop of ~1V. What does it mean? Is that an internal diode voltage drop, ie, a PN junction drop?

Basically yes.

It's the voltage dropped by the Triac when it has been triggered and is therefore in it's conductive state. The voltage will vary with the current flowing through it so the data sheet should tell you the current the 1V was measured at.
